We scheduled a dinner at Hapag in Makati a week before my best friend’s wedding to serve as part 1 of her bachelorette party and a catch up dinner as well between our trio.
The overall menu of Hapag on November was Western Visayas, so here’s everything we had:
Kinilaw - three kinds of raw fish - each with their own
The Tambo was like the Japanese Chawanmushi but topped with coconut soup, which made it so creamy and fragrant.
The Piaya was not like the sweet pasalubong I was expecting. It was served with caviar. This was actually my least favorite though it was still good.
For our palate cleanser, we were served the batwan sorbetes which was like a tamarind sorbet.
The mains were actually a bit too filling as it had some garlic rice with alamang (baby shrimp). I found the Sinugbang Adobo (dish with some soy sauce) a little too salty even with the rice. The ensalada was also so-so since it’s just grilled pechay. The highlight of this though is the kadios, baboy, at langka which was like a chashu. It was so tender and packed with flavors.
For dessert, we were served with this trio of cacao ice cream, napoleones, and pili butterscotch. The last one was my least favorite since it tasted like the usual dessert you get from pasalubong stores. The napoleones was great, though. I loved its flakiness. The cacao ice cream was a big hit, too.
This is not part of their tasting menu, but when I heard about a patis coffee, I ordered it right for me to try to cap the night off. At first sip it was great. It tasted like your usual salted caramel latte and without the pungent smell of the patis. But after some time it started tasting too sweet and too salty.
The price for the tasting menu is ₱7,000. A 50% downpayment is required upon reservation.
