Pops n' Pebs is a simple concept located inside Courtyard 453 that serves home style Filipino and Spanish cuisines.

At first I thought this was kare-kare, until I realized just now that it's actually callos (kind of explains a lot why it didn't taste much like kare-kare haha!) It was okay. I like ox tripe, so it's not hard to like callos, although it's also a bit oily for me.
The crispy paa from Pops n' Pebs also wasn't so bad. Its meat was tender, but what we really loved munching on was its thick and crispy skin.
Their Daing na bangus is not the best one I've had, although it also isn't the worst. I loved how it has an even ratio of fat to meat, and how the generous sprinkling of fried garlic contributed to making the bangus taste even better. I would've preferred it if it had a stronger taste of vinegar, which can be achieved if it was marinated longer (or had more vinegar in the marinade?).
The caldereta was one of the favorites from our visit. Though I liked the lengua better, I can't say that the caldereta was trailing far behind. It's a dish worth ordering an extra cup of rice for, that I can assure.
I would love to come back to Pops n' Pebs and try their sisig next, since I was able to witness an order of it sizzling its way from the counter to a customer's table, and it seemed really really good.
I don't normally enjoy eating Filipino food outside of our home since my mom can cook all those Filipino dishes, but I do believe that Pops n' Pebs has what it takes to eventually become a stand-alone restaurant.
