An Exquisite French Dining Experience at NÜWA's The Tasting Room

Joining the fine line up of restaurants under the City of Dreams management is a well-renowned, 2 Michelin-starred restaurant from Macau.






The Tasting Room is the newest culinary destination in the newly rebranded NÜWA hotel (previously known as Crown Towers). The restaurant serves a degustation of French dishes that can be paired with wines carefully chosen to bring out the flavors in each of part of your meal. 



Working in the kitchen to give you only the best and finest dishes is head chef Frederic Thevenet, whose vast experience with Michelin-starred restaurants around the world is enough assurance that your visit to this prestigious fine dining restaurant will be unlike any other. 

We started the night with a few bites of chips served with tuna dip, a small bowl of bite-sized biscuit balls with parmesan shavings, and 3 types of bread (baguette, sesame, sourdough) served with semi-salted butter and seaweed butter. (These are not the actual description of our appetizers. I just wasn't able to list down their complicated names, so please forgive me)

Each of the dishes, from appetizers to desserts, were laid on our tables with top-notch service, plus a detailed explanation of what was on our plates, details you let your tastebuds instead of the mind comprehend.


First Course
First Course: Sea bass carpaccio with red and black radish, artichoke cream, cucumber jelly, celeriac remoulade, banana blossom, veal tongue, vinaigrette, and pickles
Wine pairing: 2016 Cloudy Bay, Marlborough, Sauvignon Blanc


Second Course
Second Course: (my fave!) Lobster with Espelette pepper, and lobster bisque
Wine Pairing: 2015 Domaine Mittnacht Freres, Gewürztraminer from Alsace, France


Third Course
Third Course: Cape Grim Grass Fed Beef Tenderloin, Potato Gnocchi, Baby Spinach, Beetroot
Wine Pairing: 2011 Penfolds Bin 389, Cabernet Sauvignon & Shiraz


Fourth Course
Fourth Course: Chocolate Success, Lychee Veloute
Wine Pairing: 2013 Jurancon, Clos Lapeyre

My experience at The Tasting Room is truly unforgettable and admittedly hard to replicate. The service deserves only the highest of praise. The dishes were fancy without being overcomplicated; with flavors that were unfamiliar and bold, making it easy to be appreciated, even for someone who isn't accustomed to a such a fine feast. 

It took longer than usual for me to write this post, and it's because I can't think of a way to describe everything we had. It all feels surreal. I guess the best way is to really experience it for yourselves. What I can guarantee is for you to be prepared for a different kind of gastronomic adventure.
